As Mike says, if you want to go hotel to hotel you can only do that in the summer months. The hotel we stayed at in Mahon was excellent though. I would say June or September would be your best time for hotels. The rest of the time they are either closed or fully booked. You wouldn't want to walk it when it's too hot so it would need to be early June or late September.

As it is, Doug (aka Lazlo Woodbine) organised that walk last year. We stayed in Mahon and were shuttled by a hired bus. From my memory I would say that (apart from the two bigger cities, Mahon and Ciutadella) it may be difficult to find places for just one night. Outside the summer season everything is boarded up, and in the season it will be weekly rentals for package boozers.
